Chicken in Mint

I know…this should be a photo of a finished recipe, but this crazy bird insists on nesting and laying eggs in a tub of mint so she gets to be our Cover Girl, um bird for this post.

Silly birds aside, you can make several really good chicken and mint recipes.

Here is a tasty mint recipe for grilled chicken:

Honey and Mint Glaze

This will glaze a whole cut up chicken

1/2 cup honey

1/4 cup vinegar ( I use white)

1/4 cup olive oil

1/2 cup chopped mint ( I like apple mint, orange mint or spearmint)

salt and pepper to taste

a few tablespoons of water to thin the glaze

Mix all ingredients and add the water a little at a time – just enough to make a nice spreadable glaze.

Cook your chicken until it looks like it is 5 – 10 minutes from being done.  Baste well, let chicken cook a few minutes, then turn meat and baste again. Extra glaze served on the side is great for dipping!

Try it with baked chicken, too. It’s really delicious paired with rice pilaf or quinoa. Yum!
